Bertrand Guillon : La Sartine

Directly overlooking the Old Port of Marseille, Bertrand Guillon The Sartine landscape, a new space dedicated to the delicatessen and catering. The place is a ground floor of a Haussmann building with a loft, the reduced space is then optimized by the architect and the secret of the place lies in the relationship between its bottom and top.

"To exist in this very heterogeneous environment without adding to the ambient visual cacophony, treatment of the facade had to be both discreet and able to stand out from neighboring stores" Bertrand Guillon

The program was to combine in a small space: a retail space, an integrated rear bar service and collection, an office, a preparation plant and a sanitary. Consumption itself being proposed near the old port and terrace facing Notre-Dame-de-la-Garde. Inside architect Bertrand Guillon imagine custom furnishings for a contemporary feel in opposition to neo-Provencal archetypes that contaminate other shops. The cut gives pride to light for the project. Through removal of the mezzanine, the first part of the ground floor plays with the volume of entry and remains porous to natural light. The Sartine and also has a large window becoming taught. The treatment front is both discreet but requires distinguishing itself from its neighbors.

To overcome the narrowness of the existing, Bertrand Guillon imagine a steel structure unfolding on several dimensions. It develops into the double height entrance and welcomes the bar and facilities. The shelves presentation and work plans were realized in solid oak and Corian. The mezzanine is accessible from a staircase hidden behind the bar. It houses the preparation workshop and service is facilitated by a mechanical hatch.
