Harri Koskinen et Linda Bergroth : Zero Waste Bistro

At the WantedDesign Manhattan 2018 festival in New York (USA), the Zero Waste Bistro was presented by Finnish designers Harri Koskinen and Linda Bergroth. A place of restoration following a "zero waste" strategy, the aim of which is to reduce food waste and the production of litter.

Between the 27e and 28e street is the Terminal Stores: a railway warehouse of the XIXe century brick and red sandstone today converted into Hotspot, which combines restaurants and shops but also events, including the WantedDesign festival featuring emerging designers from the international scene.

After the ephemeral London restaurant Hel Yes! Finishers Harri Koskinen and Linda Bergroth deliver, at the request of the Finnish Cultural Institute of New York, the pop-up Zero Waste Bistro designed specifically for the event. A friendly space where sustainable architecture is at the service of the culinary art.
This temporary installation consists of a corridor of more than 10 meters long punctuated with semicircular arcades. It is floor-to-ceiling with recycled TetraPak panels, made by ReWall. The marbled blue-silver hue thus stems from the color of the products reprocessed at the time of the order of the prime contractors - if we take a closer look, it is possible to glimpse barcodes scattered in the flecks!
Linda Bergroth has also produced a range of dishes including plates and vases in Durat, material made from recycled paper, packaging in Supalac, biodegradable and free of any microplastic material. For furniture, the Finnish Design Shop, the largest Nordic online store, supplied the Artek brand stools and Iittala pendant lamps. The kitchen, as ethical as the structure that houses it, is made by the chefs of the Nolla (Helsinski establishment): Luka Balac, Carlos Henriques and Albert Franch Sunyer.

A concept that proves that the circular economy is more than a utopia.
