Nestled in the south of Pigalle, rue Condorcet, the Cuisine establishment is getting a makeover. A small historic butcher in the 9th arrondissement, Cuisine is reinventing itself as a trendy bistro under the leadership of Japanese chef Takao Inazawa and his sidekick, French oenophile Benoît Simon. Halfway between the Parisian troquet and the Japanese izakaya, this friendly place invites gourmets to enjoy small fusion dishes and natural wines in a vintage decor signed by the agency Federico Masotto Architecte.
Discreet storefront and small sixties style terrace, Cuisine seems to be the address you need to know to stop there. However, since its reopening at the end of the summer, the little bistro has sold out from Monday to Friday and its name is on everyone's lips in the capital.
Voted "Best Sophistroquet" by Le Fooding®, on the occasion of its Fooding Guide 2020 Prize, Cuisine knew how to seduce the good Parisians by its generous dishes served in a vintage decor mixing genres, influences and eras. Already at the entrance, the original sign, the historic facade in polychrome marble and brass, wicker seats and bistro tables with an opaline green round table set the tone.
Inside, the wine-colored plywood wall coverings contrast with the mustard yellow ceiling and the celadon green wood fiber acoustic panels, while the wall mirrors enlarge the space and reflect Memphis-style lighting. The two-tone benches, in which mauve combines with red, the wooden chairs and tables in black formica display an assumed retro style.
As for the cuisine, we enjoy lunch and dinner. Fusion dishes promise an explosion of flavors, especially since they are cooked with seasonal products from organic or sustainable agriculture. On the menu, a peasant miso soup, a Panko breaded cheek of monkfish, Japanese tripe, or even a tofu with apricot almonds and Sollie figs.
